Coffee Roasting
The roasting process is what gives the coffee beans their own unique characteristics. There are many different methods of roasting used, which will create anywhere from a light to a dark roast of coffee beans.
Almost all coffee sold to consumers worldwide is roasted. Consumers do have the option to purchase green and unroasted coffee beans to roast them at home, which is often a popular alternative for a few reasons. One of the main reasons that consumers may choose to roast coffee at home is to save money. Green coffee beans can cost 15% less than roasted coffee beans, and it also gives the consumer the opportunity to control the flavor and taste of their roast.
If someone is a coffee connoisseur and hoping to experience more from sampling coffee, roasting at home provides the opportunity to roast very small amounts, like 3 ounces, fresh for a coffee tasting or cupping. Furthermore, home roasting coffee will allow the consumer the opportunity to customize their roast to their own preference, which is something that cannot be bought in a store.
Otherwise, it is recommended to purchase coffee beans freshly roasted and not beans that have been sitting on a shelf for a long period of time. When coffee beans are freshly roasted, they will begin to go stale within ten days, so they are best enjoyed within one day to ten days after roasting.
The best method for purchasing freshly roasted coffee beans is through a local roaster or online vendor that sells beans that are freshly roasted before they ship. Again, the finest way to enjoy any type of coffee beans is grinding them freshly before brewing, so it only makes sense that pre-ground coffee is not recommended because it has already gone stale.
If a consumer is going to purchase decaffeinated coffee, it is definitely not advised to purchase it from a grocery store location because decaffeinated coffee is purchased less often, so it will most likely be quite stale on the shelf.
When coffee is roasted, it will take place after it has been harvested and sorted completely. In larger commercial companies, green coffee beans will be mass roasted within a machine after they have been filtered to remove any debris. The unroasted coffee beans will be moved into a roaster, which will normally roast beans at temperatures anywhere from 370° and 540°F. The beans can be roasted from 3 to 30 minutes, and they will be rotated within a horizontal drum to heat and tumble the coffee beans in hot gases.
One interesting fact about coffee roasting is that light roasted coffee beans actually contain more caffeine than dark roasted coffee beans. Coffee beans lose weight in the roasting process, and the longer that they are roasted, the more caffeine is roasted from the beans.
Many commercial coffee roasters will adhere to a roast profile, which will bring out specific flavors that they are hoping to offer within the roast. This is similar to following a recipe, and many factors determine which roast profile is used for the coffee beans. Some factors include the origin of the coffee beans, processing method, or desired flavors in the final product.
Some commercial coffee vendors also will roast with an indirect-fired roaster, which is where the flame does not come into contact with the beans.
After the coffee beans have been roasted, they will be cooled in a vacuum process. They are also cooled with a water mist, which is called quenching the coffee beans. However, this method is not preferred to cooling with air in a vacuum because the water can cause the coffee beans to oxidize due to moisture so that they will go stale more quickly. For a more gourmet coffee bean, it should be cooled with an air and vacuum process to preserve the integrity of the roast.
From this point, the freshly roasted coffee beans will be packaged, and they will often be placed into a heat sealed valve bag that will allow air to escape from the bag to prevent the beans from oxidizing. This type of packaging will keep the beans fresh for up to one month at a time, but again, once coffee beans are freshly ground, they need to be used right away.
There are a number of roast levels on the market, depending on the flavor and taste of the consumer. A lighter roast of coffee will finish roasting after the first crack of the beans, and a darker roast will be roasted
